Healthy Nectarine Mojito Mocktail Recipe

For those looking for a delicious and refreshing drink but don’t want the alcohol, this one’s for you! The combo of nectarine, lime juice, mint, honey and soda water makes for the perfect mocktail you’ll want to be sipping all summer long!

Ingredients

Total time: 10 minutes
Yield: 1 Mocktail

  • 1 small ripe nectarine or 1/2 large nectarine
  • 8 sweet mint leaves
  • 1 lime cut into wedges
  • 1 oz honey simple syrup
  • 2/3 cup soda water
  • Ice

Directions

  1. Wash the nectarine and lime and cut into slices.
  2. In a cocktail shaker, squeeze the lime wedges and add mint leaves. Gently muddle the mint with the lime juice. Add the nectarine slices and muddle into a pulp, until all the juices are released.
  3. Add the honey simple syrup and some ice. Shake vigorously for 15 seconds to release all the flavors.
  4. Strain into a glass with ice and top with soda water. (If you have trouble straining the pulp, you can add a tablespoon of water, shake, and strain)
  5. Add a mint sprig garnish, nectarine slice or lime wedge if desired.
  6. Enjoy!

How to Make Honey Simple Syrup

You’ll need:

  • 1 cup raw honey
  • 1 cup filtered water

Add water and honey to a sauce pan and set on low heat. Stir frequently until warm and honey is fully dissolved. Do not let it boil or reach high heat, as this may alter the nutritional benefits of the honey.

Remove from heat and let cool for 10 minutes. Pour into an airtight jar and store in fridge. This can stay good for up to a month!
